Our Benedictine community took root in 1846, under the steady watch of founder Boniface Wimmer, a monk from Bavaria. Shortly after opening the school, Wimmer commissioned the construction of a gristmill. He purchased two sets of French grinding stones — buhrstones — from a quarry in the Marne Valley in northern France. Saint Vincent has been turning out fine ground wheat and amazing alumni ever since.
